Method
Base Syrup & Sweetening
Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring until sugar is fully dissolved. Remove from heat and let cool to room temperature, about 15–20 minutes.
Stir in 2 tablespoons agave nectar into the cooled syrup until integrated. This provides body and mild floral sweetness that holds up when chilled and carbonated.
Citrus & Aromatics
Juice & zest
Juice fresh lemons and limes to yield about 3 tablespoons lemon juice and 1 tablespoon lime juice. Zest one orange to yield 1 tablespoon orange zest. Strain juices to remove pulp and seeds if desired.
Gently slap 6 mint leaves between your palms to release oils, then set aside for muddling or garnishing.
Spice & Bitters
Measure 6 dashes of Angostura bitters and 1 teaspoon ground cardamom. Cardamom will add a warm, slightly floral note that complements citrus and the base spirit.
Base Spirit & Fortifying
In a large pitcher or mixing vessel, combine 12 oz blanco tequila (or chosen spirit) with 4 oz dry vermouth. This creates a moderately fortified base suitable for batching; adjust spirit choice to fit your menu.
Assemble Batch
Combine components
To the pitcher with spirits, add the cooled simple syrup + agave mixture (use 6 oz of syrup for the batch — reserve remainder refrigerated for up to 2 weeks), then add the lemon and lime juices, orange zest, 6 dashes Angostura bitters, and 1 tsp ground cardamom. Stir thoroughly to incorporate—about 30 seconds.
Taste and adjust: if too tart, add up to 1 tablespoon more agave or syrup; if too sweet, add an extra teaspoon of lemon juice.
Chill & Carbonate
Refrigerate the assembled batch for at least 30 minutes to meld flavors. When ready to serve, fill a clean carafe or soda siphon with the chilled batch up to two-thirds full, then top with 12 oz club soda just before serving to preserve fizz.
If serving individually: fill six highball glasses with about 1 cup ice each, pour approximately 3 oz of the chilled cocktail base over ice, top with 2 oz sparkling water in each glass, and gently stir once to combine.
