Form patties

Divide the ground beef into 2 equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 inch thick and slightly wider than the bun. Do not overwork the meat — press once or twice to shape. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.

Season patties

Season both sides of the patties evenly with kosher salt and freshly ground black pepper. Sprinkle the Worcestershire sauce on one side of each patty and gently press it in so it adheres.

Cook patties

Heat a heavy skillet or griddle over medium-high heat. Add the vegetable oil and let it shimmer (about 1 minute). Place the patties on the hot surface, leaving space between them. Cook for 3-4 minutes without moving to develop a crust. Flip and cook another 3 minutes for medium (adjust time +/- 1-2 minutes for desired doneness). In the last 1 minute of cooking, place a slice of cheddar on each patty and cover loosely with a lid to melt the cheese.

Toast buns

While the patties are cooking, spread softened butter on the cut sides of the burger buns. Place them butter-side down in a separate skillet or on the griddle over medium heat. Toast until golden brown, about 1-2 minutes. Remove and keep warm.

Prepare fresh toppings

Slice the tomato into 1/4 inch rounds and thinly slice the red onion. Pat the lettuce dry. Arrange the dill pickle slices so they're ready to use.

Assemble sauce

In a small bowl combine mayonnaise, yellow mustard, and ketchup. Stir until smooth. Taste and add optional hot sauce if you want a little heat.

Assemble burger

Spread about 1 tablespoon of the mayo-mustard-ketchup sauce on the bottom bun. Place a lettuce leaf on the sauce, add the cheesy patty, then top with tomato slice(s), red onion rings, and 3 pickle slices. Spread a little sauce on the top bun and close the burger. Repeat for the second burger.

Finishing & Service

Cut the assembled burgers in half if desired and serve immediately while hot with your choice of fries or chips. Provide extra ketchup, mustard, and pickles on the side if requested.
