Activate and mix

In a large mixing bowl combine warm water, instant yeast, and sugar. Stir and let rest 3–5 minutes until slightly foamy (if it doesn't foam, yeast may be inactive). Add olive oil, flour, and salt.

Form the dough

Mix with a wooden spoon until a shaggy dough forms. Turn onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic. If using a stand mixer, knead 4–5 minutes with a dough hook.

First rise

Lightly oil a bowl, place the dough inside, cover with plastic wrap or a towel, and let rise in a warm place until doubled, about 60–90 minutes.

Shape

Punch down the dough, turn it onto a floured surface, and divide for one 12–14" pizza. Let rest 10 minutes before shaping to relax the gluten.

Make quick sauce

While the dough rises, mix crushed tomatoes, tomato paste, minced garlic, dried oregano, dried basil, salt, pepper, and olive oil in a bowl. Taste and adjust seasoning. No cooking required for a simple fresh-tasting sauce; set aside.

Preheat and prepare

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat for at least 30 minutes. Lightly dust a pizza peel or baking sheet with cornmeal or flour.

Stretch the dough

On a floured surface, flatten the rested dough with your hands into a disk, then stretch or roll into a 12–14" circle. Transfer the shaped dough to the prepared peel or baking sheet.

Add sauce and cheese

Spread 1/2 to 3/4 cup of the prepared sauce evenly over the dough, leaving a 1/2" rim. Sprinkle the shredded mozzarella evenly, then grate the parmesan over the top. Add optional toppings (pepperoni, sliced vegetables) as desired.

Bake

Brush the exposed crust lightly with 1 tablespoon olive oil. Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake 10–12 minutes until crust is golden and cheese is bubbly and slightly browned.

Remove pizza from oven. Scatter fresh basil leaves over the hot pizza, let rest 2–3 minutes, then slice. Serve hot.
