Preheat and prepare

Place an oven rack in the lowest position and preheat oven to 500°F (260°C). If you have a pizza stone, place it in the oven while it preheats. Lightly dust a pizza peel or baking sheet with 2 tablespoons (included in flour measurement) of the flour.

Shape the dough

On a lightly floured surface, stretch or roll the pizza dough into a 12-inch round. Aim for an even 1/4- to 1/3-inch thickness with a slightly thicker rim. Transfer the shaped dough to the floured peel or baking sheet.

Assemble pizza

Brush the dough rim lightly with 1 tbs olive oil. Spread the tomato sauce evenly over the dough, leaving a 1/2-inch border. Tear the fresh mozzarella into small pieces and distribute evenly across the sauce. Sprinkle the grated parmesan, salt, black pepper, and crushed red pepper (if using) over the top.

Bake

Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake for 7–10 minutes, until the crust is blistered and golden and the cheese is melted and slightly browned in spots. If using a baking sheet without a stone, bake 10–12 minutes.

Finish and serve

Remove pizza from oven. Scatter fresh basil leaves over the hot pizza and drizzle the remaining 1 tbs olive oil around the crust. Let rest 2 minutes, slice into 6–8 pieces, and serve immediately.

Crispy Buffalo Wings

Prep oven and wings

Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with foil and set a wire rack on top. Pat the chicken wings very dry with paper towels—removing surface moisture is key for crispiness.

Coat wings

In a large bowl, combine baking powder, kosher salt, black pepper, garlic powder, and smoked paprika. Add the dried wings and toss until evenly coated. Arrange the wings in a single layer on the wire rack. Lightly brush or spray the wings with neutral oil.

Bake until crispy

Bake wings in the preheated oven for 25 minutes. Flip each wing and continue baking for another 20–25 minutes until skin is deep golden and very crisp. Internal temperature should read 165°F (74°C). For extra crispness, broil 2–3 minutes at the end while watching closely.

Make buffalo sauce

While the wings bake, melt the unsalted butter in a small saucepan over low heat. Stir in the hot sauce, honey (if using), and apple cider vinegar. Heat gently until combined and slightly thickened, then remove from heat.

Toss wings in sauce

When wings are fully cooked and crispy, transfer them to a large bowl. Pour the warm buffalo sauce over the wings and toss thoroughly until each piece is evenly coated.

Arrange sauced wings on a platter. Serve immediately with blue cheese dressing and celery sticks on the side.
