Bloom the yeast

In a small bowl, combine the warm water, sugar and active dry yeast. Stir gently, then let sit 5–10 minutes until foamy and fragrant.

In a large mixing bowl or stand mixer fitted with a dough hook, combine the flour and salt. Make a small well and add the olive oil and the foamy yeast mixture.

Mix until a shaggy dough forms. If using a stand mixer, knead on medium-low for 6–8 minutes until dough is smooth and slightly tacky but not sticky. If kneading by hand, turn dough onto a lightly floured surface and knead 8–10 minutes.

Form the dough into a ball, lightly coat with olive oil, place in a bowl, cover with plastic wrap or a damp towel, and let rise in a warm draft-free place for 60–90 minutes, or until doubled in size.

Punch the dough down, transfer to a lightly floured surface, divide into two equal portions (for two 10–12" pizzas) or keep whole for one large pizza. Let rest 10 minutes before shaping.

Tomato Sauce

While the dough rises, heat 1 tablespoon extra virgin olive oil in a small saucepan over medium heat. Add the minced garlic and sauté 30–60 seconds until fragrant but not browned.

Add the crushed tomatoes and tomato paste, stir to combine. Add dried oregano, salt, black pepper and optional sugar. Reduce heat to low and simmer gently for 10–12 minutes, stirring occasionally until slightly thickened. Remove from heat and let cool slightly.

Taste and adjust seasoning as needed. This yields about 1 cup of sauce—enough for one 12" pizza or two smaller pies when used sparingly.

Assembly & Baking

Preheat oven to 500°F (260°C). If you have a pizza stone, place it on the center rack and allow it to preheat at temperature for at least 30 minutes. If using a baking sheet, preheat the sheet.

On a lightly floured surface, stretch or roll one dough ball into a 10–12" round. Transfer to a piece of parchment paper or a well-floured pizza peel.

Spread about 1/2 cup of the tomato sauce evenly over the dough, leaving a 1/2" border for the crust.

Scatter about 1 cup of shredded mozzarella evenly over the sauce. Arrange pepperoni slices evenly on top of the cheese. Sprinkle grated Parmesan and crushed red pepper flakes evenly.

Drizzle the crust edge lightly with a teaspoon of olive oil to help browning.

Slide the pizza onto the preheated stone or baking sheet. Bake for 8–12 minutes, or until crust is golden and blistered and cheese is melted and bubbling. Baking time will vary with oven and stone; watch closely after 8 minutes.

Remove pizza to a cutting board and let rest 2–3 minutes. Scatter fresh basil leaves on top and brush very lightly with olive oil if desired. Slice and serve.
