If creating a lemon-bright pattern instead of cocoa, stir 1 tbsp lemon zest into the reserved batter (omit cocoa and coffee) to make a citrus variation.
Create the pattern
Using a spoon or a small piping bag, drop tablespoon-size dollops of the patterned batter (chocolate or lemon) evenly across the top of the base batter in the pan. For a simple grid pattern, place dollops in rows; for a marbled look, place them randomly.
Form the pattern
Using the back of a spoon, a small offset spatula, or a skewer, gently drag through adjacent dollops and the base batter in straight or curved lines to create the desired patterned effect. Work quickly but gently to avoid fully blending the batters—aim for visible contrast.
Finish and serve
