Butter-Poached Halibut with Cauliflower Purée, Charred Baby Carrots, and Lemon Verbena Oil

Prepare lemon verbena oil

Warm 80 ml neutral oil in a small saucepan over very low heat until just warm (do not exceed 60°C / 140°F). Remove from heat, add lemon verbena leaves, stir, cover and steep for 25–30 minutes. Strain through fine mesh, press gently to extract oil, discard solids. Chill or keep at room temperature until plating.

Blanch and purée cauliflower

Bring a medium pot of salted water to a boil. Add cauliflower florets and simmer until very tender, about 8–10 minutes. Drain well, reserving 60 ml of cooking water. Transfer cauliflower to a blender or food processor, add 60 ml heavy cream, 1 tbsp butter, 2 tbsp olive oil, 2 tbsp grated Parmesan, and 1/2 tsp kosher salt (from the total). Purée until very smooth, adding up to 60 ml reserved cooking water to loosen to a silky, spoonable consistency. Taste and adjust seasoning with a pinch of white pepper and more salt if needed. Keep warm in a thermos or over a very low bain-marie, covered.

Prepare and glaze baby carrots

Preheat oven to 220°C (425°F) with rack in upper third. Toss peeled baby carrots with 1 tsp olive oil, 1 tbsp honey, 3 thyme sprigs (leaves only), and a pinch of salt. Spread on a rimmed sheet pan and roast 12–15 minutes until just tender and slightly charred at edges. Alternatively, char briefly in a hot skillet (2–3 minutes each side) and finish in oven. Keep warm.

Butter-poach the halibut

Season halibut fillets lightly with 1 tsp kosher salt and 1/4 tsp white pepper. In a wide sauté pan large enough to hold both fillets in a single layer, melt 6 tbsp unsalted butter over low heat until it reaches about 65–75°C (150–165°F) and the solids begin to foam slightly but not brown. Add 120 ml vegetable stock and 1 tbsp lemon juice to the butter, then gently lay the fillets in flesh-side up. Spoon warm butter over the top periodically and maintain an internal liquid temperature of about 65°C. Cook gently, turning once if necessary, until the fish registers 46–50°C (115–122°F) in the thickest part — about 6–9 minutes depending on thickness. Remove fish to a warm plate and rest 2 minutes. Strain 2–3 tbsp of the poaching liquid (butter and juices) into a small container to spoon over fish when plating.

Finish purée and season components

Rewarm cauliflower purée if needed and whisk in a final 1 tsp olive oil for sheen. Taste roasted carrots and adjust glaze with an extra pinch of salt or a few drops of lemon juice if desired. Warm lemon verbena oil slightly before plating if chilled.

Plate

Spoon a generous quenelle or smear of cauliflower purée onto each plate as the base. Place a halibut fillet atop the purée. Arrange 6 charred baby carrots alongside the fish. Drizzle 1–2 tsp strained butter poaching liquid over the halibut. Dot or lightly streak lemon verbena oil around the purée (use sparingly for muted color and delicate flavor). Finish with a few microgreens, a few flakes of sea salt, and a grind of black pepper. Garnish with reserved thyme leaves.

Notes

All elements are meant to read muted and refined—use very small amounts of brightly colored garnishes. Timing: prepare purée first and keep warm, roast carrots next, then make lemon verbena oil while oven is on and finish by butter-poaching fish just before service so protein is at optimal temperature.
