Method

Rinse the edible flower petals gently and set aside to drain.
In a pitcher, muddle 1/4 cup of the petals lightly with the sugar and lime juice to release color and aroma (use the back of a spoon).
Add the remaining petals, cold water, and stir until sugar dissolves. Taste and adjust sweetness or lime as desired.
Strain the agua fresca through a fine sieve into a serving pitcher to remove solids, pressing gently to extract flavor (reserve a few whole petals for garnish).
Add ice and mint leaves if using. Serve chilled in glasses garnished with reserved petals and a lime wedge.
Citrus-Cilantro Seared Fish (for tacos or plates)
Prepare fish
Pat the fish fillets dry with paper towels and place on a cutting board. Cut into 6 taco-sized pieces if making tacos, or leave whole for plated portions.
In a small bowl, combine olive oil, lime juice, minced garlic, chopped cilantro, ground cumin, kosher salt, and black pepper to make a quick marinade.
Brush or rub the marinade over both sides of the fish pieces and let sit 10 minutes at room temperature (no more than 15 minutes to avoid denaturing the fish).
Flip and cook an additional 1–2 minutes until fish is opaque and flakes easily (internal temp ~135–140°F / 57–60°C). Remove from pan and let rest 1–2 minutes.
Assemble tacos: place shredded cabbage on each tortilla, top with a piece of seared fish, a spoonful of hibiscus-ginger salsa verde (see next section), sliced radishes, a sprinkle of cilantro if desired, and finish with a squeeze of lime.
Minimalist Hibiscus-Ginger Salsa Verde (bright, floral note)
Place the dried hibiscus in a small bowl and pour the hot water over it. Let steep 10 minutes until deeply colored and slightly tart. Strain and reserve 2 tablespoons of the hibiscus infusion; discard solids or save for another use.
While hibiscus steeps, char the tomatillos: heat a skillet or comal over medium-high heat and cook whole or halved tomatillos until blistered and blackened in spots (about 6–8 minutes), turning occasionally.
Pulse until you reach a slightly chunky but saucy consistency. Taste and adjust salt, lime, or hibiscus for brightness. Chill briefly or serve at room temperature with fish tacos or as a condiment.
Simple Floral-Citrus Dessert: Orange Blossom Crema with Candied Petals
Prepare candied petals: whisk the egg white lightly until frothy in a small bowl. Dip each petal into the egg white, then place on a parchment-lined tray and gently sift granulated sugar over both sides so petals are lightly coated. Let set until dry, about 30–45 minutes.
Make the crema: in a chilled bowl, beat the heavy cream just until soft peaks form. In a separate bowl, soften mascarpone with the powdered sugar and orange zest until smooth.
Fold the whipped cream into the mascarpone mixture along with the orange blossom water until homogenous and light. Taste and add a touch more orange blossom water or powdered sugar if desired.
Spoon the crema into small serving dishes, top with a few candied petals and a small sprinkle of orange zest. Serve chilled.
