Assemble

Lay out the 4 small tortillas on a clean surface. Sprinkle about 1/4 cup shredded cheddar on half of each tortilla, then fold the other half over to form a semicircle.

Cook

Heat a nonstick skillet over medium-low heat and add 1/2 tbs butter. When butter is melted and foamy, place 1–2 quesadillas in the pan (don’t overcrowd). Cook 1.5–2 minutes per side until the tortilla is lightly golden and cheese is melted. Add more butter if needed and repeat with remaining quesadillas.

Cut each quesadilla into 3 wedges and serve warm with mild salsa on the side for dipping.

Crispy Oven Baked Chicken Tenders

Prep oven and dredging station

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and place a wire rack on top if available. Lightly spray the rack or baking sheet with cooking oil spray.

Prepare coating

In a shallow bowl whisk the egg and milk together. In a second shallow bowl combine panko breadcrumbs, grated Parmesan, paprika, salt, and black pepper. Place the flour in a third shallow bowl.

Coat the chicken

Pat chicken strips dry with paper towel. Dredge each strip first in flour, shaking off excess, then dip into the egg mixture, and finally press into the panko mixture so they’re evenly coated. Place coated strips on the prepared rack/baking sheet spaced slightly apart.

Bake

Lightly spray the coated chicken strips with cooking oil spray. Bake in the preheated oven for 12–15 minutes, flipping once halfway through, until the exterior is golden and an instant-read thermometer inserted into the thickest piece reads 165°F (74°C).

Remove from oven and let rest 2 minutes before serving. Serve with extra ketchup or mild dipping sauce if desired.

Rinse the baby carrots, cucumber sticks, and grapes. Halve large grapes and arrange carrots and cucumbers on a small plate with a little cup of hummus for dipping. Keep chilled until serving.

In a small cup or bowl, spoon half the vanilla yogurt, then half the mixed berries, then sprinkle half the granola. Repeat layers with remaining yogurt, berries, and granola. Drizzle the optional teaspoon of honey over the top if desired.
