Make ginger simple syrup

Peel and thinly slice a 4–5 oz piece of fresh ginger. In a small saucepan combine 1 cup water and 1 cup granulated sugar and the sliced ginger. Bring to a simmer, stirring until sugar dissolves. Simmer gently for 8–10 minutes to infuse. Remove from heat, let steep 20 minutes, then strain out ginger. Cool completely. (Yield: about 1 cup)

Prepare rim mix

On a small plate combine 1/4 cup coarse salt with 1–2 teaspoons chili powder (adjust heat to preference). Spread out on the plate for rimming glasses.

Batch the cocktail

In a large mixing pitcher or clean beverage dispenser combine 3 cups blanco tequila, 1 cup triple sec, 1 cup fresh lime juice, 1 cup fresh orange juice, and 1 cup cooled ginger simple syrup. If you prefer a sweeter drink, stir in 2 tablespoons agave nectar now. Stir thoroughly to combine and chill in refrigerator for at least 30 minutes (or proceed immediately with ice and shaking for individual servings).

Chill and serve (batch method)

If serving directly from the pitcher/dispenser: Fill each cocktail glass with ice. Lightly wet the rim of each glass with a lime wedge, then dip into the salt-chili rim mix. Add ice to the glass. Pour 4–6 oz of the batched margarita into each glass (roughly 1/2 to 3/4 cup depending on glass size). Top each with 2–3 tablespoons (about 1–2 oz) club soda to lengthen and give a lift. Garnish with a lime wheel and optional candied ginger slice.

Individual shaken method (optional)

For a brighter, more aerated drink: fill a cocktail shaker with 2 cups ice. Add 3 oz (6 tablespoons) of the batched mixture (or combine 1.5 oz tequila, 0.5 oz triple sec, 0.5 oz lime juice, 0.5 oz orange juice, 0.5 oz ginger syrup for a single cocktail). Shake vigorously for 10–12 seconds. Strain into a salt-rimmed rocks glass over fresh ice. Top with a splash (1–2 tablespoons) of club soda. Garnish with a lime wheel and candied ginger.

Storage and yield

Keep the remaining batched margarita refrigerated up to 3 days (cover tightly). Do not add club soda until serving to preserve fizz. This batch yields roughly 10–12 servings at 4–6 oz each before club soda.
