Form patties

Divide the ground beef into four equal portions (about 4 oz each). Gently form each into a patty about 3/4 inch thick, making a shallow 1/2-inch dimple in the center so the patty cooks evenly.

Season both sides of each patty with kosher salt, black pepper, and the proprietary spice blend (or the smoked paprika/garlic/onion/cumin mix). Press the seasonings lightly so they adhere.

Preheat a skillet or griddle over medium-high heat and add 1 teaspoon vegetable oil, spreading to coat. When the oil is shimmering, place the patties on the hot surface leaving space between them.

Cook the patties 3-4 minutes on the first side without moving so a crust forms. Flip and cook another 2-3 minutes for medium (adjust time for desired doneness). Place a slice of cheddar cheese on each patty during the last 1-2 minutes of cooking and cover the skillet or place a lid to help the cheese melt.

Guacamole

Halve the avocados, remove pits, and scoop flesh into a medium bowl.

Add the lime juice immediately and mash the avocado with a fork to your preferred texture (smooth or slightly chunky).

Stir in the minced red onion, chopped cilantro, minced jalapeño (if using), salt, and black pepper. Taste and adjust seasoning or lime as needed. Keep covered and refrigerate briefly if not using immediately to slow browning.

Toppings & Assembly

Cook the bacon: in a separate skillet over medium heat, arrange the uncured bacon slices in a single layer. Cook 3-5 minutes per side until crisp to your liking. Transfer to a paper towel-lined plate to drain.

Toast the buns: brush the cut sides of the burger buns lightly with butter. Toast on a hot skillet or griddle until golden, about 30-60 seconds, or place under a broiler for 1 minute watching closely.

Assemble the burgers: place a lettuce leaf (if using) on the bottom bun, add the cheeseburger patty with melted cheddar, top with 2 slices of crispy bacon, a generous spoonful (about 2-3 tbs) of homemade guacamole, and a slice of tomato. Finish with the top bun.

Serve immediately while patties are hot and cheese is melty. Provide extra guacamole and napkins — these burgers can be juicy.
