Sparkling Citrus Cocktail

Rosemary-Maple Whiskey Smash (for non-sweet balance)

Method

Sparkling Citrus Cocktail

1

Prepare glassware

Chill 6 coupe or flute glasses in the refrigerator for at least 15 minutes or fill with ice while prepping to keep them cold.

2

In a large measuring cup or pitcher, combine fresh orange juice, elderflower liqueur, fresh lemon juice, and simple syrup. Stir gently to integrate.

3

Add chilled sparkling wine to the juice mixture and stir once gently — do not over-stir to preserve bubbles.

4

Fill chilled glasses with a little ice if desired (for casual service) or leave neat. Pour the cocktail evenly into 6 glasses (about 2.5 oz / 75 ml per glass).

5

Garnish each glass with an orange twist or thin wheel and serve immediately.

Rosemary-Maple Whiskey Smash

6

Lightly bruise the rosemary sprigs between your hands or with the back of a spoon to release oils. Reserve one small sprig per glass for garnish.

7

In a cocktail shaker, combine bourbon, maple syrup, and fresh lemon juice. Add 4 of the bruised rosemary sprigs and fill shaker with ice.

8

Shake vigorously for 10–12 seconds until well chilled and slightly frothy.

9

Strain into 6 lowball glasses filled with crushed ice, dividing liquid evenly (~2 oz / 60 ml per glass). Top each with a splash of club soda (about 1 tablespoon / 0.5 oz each).

10

Garnish with reserved rosemary sprig and a lemon wheel. Serve immediately.

Herbed Goat Cheese Crostini

11

Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet in a single layer.

12

Brush each slice lightly with olive oil (use about 3 tbs total), sprinkle a pinch of sea salt over the slices, and toast in the oven 6–8 minutes, flipping once halfway, until golden and crisp.

13

While toasts are warm, gently spread about 1 to 1.5 teaspoons of goat cheese on each slice. For 6 servings with small bites plan ~10–12 crostini; adjust spread accordingly.

14

In a small bowl, mix honey, chopped fresh thyme leaves, lemon zest, and cracked black pepper. Spoon a small drizzle (about 1/2 tsp) over each crostini.

15

Arrange crostini on a platter and serve warm or at room temperature.

Marinated Olive & Almond Bowl

16

In a medium bowl, combine mixed olives and smoked almonds.

17

Drizzle with olive oil, add lemon zest, fresh thyme leaves, red pepper flakes, and cracked black pepper. Toss to coat evenly.

18

Let marinate at room temperature for at least 30 minutes (or up to 4 hours refrigerated) to allow flavors to meld. Bring to room temperature before serving if chilled.

19

Transfer to a serving bowl and place on the happy hour menu alongside crostini and cocktails.
