Bloom gelatin
Pour 1/2 cup of the water into a small heatproof bowl. Sprinkle 2 tsp unflavored gelatin evenly over the surface and allow to bloom for 5 minutes until spongy.
Dissolve sugar
In a small saucepan combine the remaining 1/2 cup water and 2 tbs sugar. Warm over low heat, stirring, just until sugar dissolves and liquid is warmed but not boiling (about 2–3 minutes).
Combine
Add the bloomed gelatin to the warm sugar water and stir gently until the gelatin completely dissolves (about 1–2 minutes). Remove from heat.
Clarifying & Stabilizing Add-ins
Add lemon and salt
Stir in 1 tbs lemon juice and 1 tsp salt to the warm gelatin mixture. Lemon adds brightness and helps clarify the mixture.
Slurry cornstarch
In a small cup combine 1 tsp cornstarch with 1 tsp cold water to make a smooth slurry. Return the saucepan to low heat and whisk the slurry into the gelatin mixture, heating gently just until it begins to thicken very slightly (30–60 seconds). Do not boil.
Cool and test
Allow the mixture to cool at room temperature for 8–10 minutes until it is warm but not hot. If you need a clearer finish, skim any tiny foam that appears on the surface with a spoon.
Finish & Presentation
Set into mold or display
Pour the warm mixture into the intended display vessel or a shallow mold. For a crystal-clear, license-like pane, tilt the mold slightly and pour steadily to avoid bubbles. Allow to set at room temperature for 1–2 hours until firm to the touch.
Chill and unmold
Transfer to the refrigerator for 30–60 minutes to fully firm and chill. To unmold, briefly dip the bottom of the mold into warm water (1–2 seconds) and invert onto your display surface.
Garnish
Apply optional edible gold leaf sparingly to one corner using tweezers for a small highlight (about 1/4 tsp worth). Add microgreens or a small herb sprig for contrast and serve/display immediately.
