Forming Patties
Place the ground beef in a bowl. Sprinkle salt, black pepper, and Worcestershire sauce over the meat. Gently mix with your hands until just combined—do not overwork. Divide into four equal portions (about 6 oz / 170 g each). Form each portion into a loose patty about 3/4" thick and 4" across. Make a shallow indentation in the center of each patty with your thumb to prevent puffing while cooking.
Preheat & Cook
Heat a heavy skillet or griddle over medium-high heat until hot. Add 1 tablespoon oil and swirl. Place patties on the hot surface (work in two batches if needed). Cook without pressing for 3-4 minutes until a deep brown crust forms. Flip and cook 2-3 minutes more for medium (adjust time for desired doneness). During the last 30–45 seconds, place a slice of American cheese on each patty, cover the skillet briefly (or tent with foil) to melt the cheese.
Assemble Burgers
Spread a generous tablespoon of diner special sauce on the bottom bun. Add a lettuce leaf, then the cheeseburger patty, tomato slice, onion, and pickles. Top with sauce if desired and crown with the top bun. Serve immediately alongside fries.
Diner Special Sauce
Whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish, apple cider vinegar, sugar, smoked paprika, and black pepper in a small bowl until smooth. Taste and adjust seasoning—add a pinch more sugar if too sharp, or a splash more vinegar if you want more tang. Refrigerate while you prepare the rest of the meal; sauce will keep up to 5 days covered.

Prep Potatoes
Cut peeled russets into 1/3"–1/2" thick matchstick fries. Place cut fries in a large bowl and cover with cold water. Soak for at least 30 minutes (or up to 2 hours) to remove surface starch, which improves crisping.
Rinse & Dry
Drain the soaking water and rinse the fries under cold running water until the water runs clear. Spread fries on clean kitchen towels or paper towels and dry thoroughly—removing surface moisture is essential for crispiness.
Coat & Fry — First Fry (Blanch)
Warm vegetable oil in a heavy pot to 325°F (about medium). If you don't have a thermometer, heat until small bubbles appear around a test stick but oil is not smoking. Toss dried fries with cornstarch in a large bowl until evenly coated. Fry the fries in batches for 3–4 minutes until soft but not brown. Use a slotted spoon to transfer fries to a wire rack set over a sheet pan to drain and cool.
Second Fry (Crisp)
Increase oil temperature to 375°F. Fry the blanched fries in batches for 2–3 minutes until golden brown and crisp. Remove with a slotted spoon to the wire rack, season immediately with salt and freshly ground black pepper. Keep batches warm in a 200°F oven if necessary and serve hot.
