Method
Lavender Honey Latte (single serving)
Prepare espresso or coffee
Pull a single 1-ounce espresso shot (or prepare 1 shot-equivalent of very strong brewed coffee). Set aside in a warmed cup.
Make quick lavender infusion
Place 1 tsp dried culinary lavender buds in a small heatproof cup. Pour 2 tablespoons of just-boiled water over the buds and steep for 3 minutes. Strain through a fine mesh sieve or coffee filter, pressing gently to extract flavor. Reserve the infused liquid and discard the solids.
Combine sweeteners
In the cup with the espresso, add 1 tablespoon honey and the lavender-infused water. Stir until honey dissolves. Add 1 tsp vanilla extract and 1 tsp fine sugar if using; stir to combine. Taste and adjust sweetness.
Heat and texture milk
Warm 1 cup whole milk to 140–150°F (60–65°C) on the stove over low-medium heat, stirring often to prevent skin. If you have a steam wand, steam milk to velvety microfoam. Alternatively, warm milk and then froth with a handheld frother or vigorous whisk until silky foam forms.
Finish and serve
Pour the textured milk over the espresso-sweetener mixture, holding back foam with a spoon and then spooning a light layer of foam on top. If desired, garnish with a light sprinkle of crushed dried lavender buds or place a single small edible lavender sprig on the foam. Serve immediately.
Alternative dairy / vegan option
Follow the same steps as the main recipe but substitute 1 cup barista-style oat milk (or almond milk). If using neutral floral syrup instead of honey, add 1 tablespoon to the espresso along with the lavender infusion and vanilla; adjust to taste. Oat milk froths best; warm carefully to avoid scorching.
Small-batch lavender milk infusion (make-ahead)
Infuse milk
Combine 3 cups milk (or oat milk) and 1 tablespoon dried lavender in a small saucepan. Warm gently over low heat until steaming — do not boil — and maintain at a simmer for 6–8 minutes, stirring occasionally to prevent skin. Remove from heat and let steep, covered, for 15 minutes off heat for a more rounded flavor.
Strain and sweeten
Strain the milk through a fine mesh sieve lined with cheesecloth into a clean container, pressing gently on solids. Stir in 3 tablespoons honey (or syrup) and 1 tsp vanilla until fully incorporated. Cool to fridge temperature if storing; keep refrigerated up to 3 days.
Reheat and use
When ready to serve, gently reheat one cup of the infused milk to 140–150°F (60–65°C), froth as desired and proceed with the latte assembly using a single espresso shot per serving.
