Choose and measure your desired add-ins (vegetables, proteins, cheeses). For a single omelette use approximately the listed amounts. Dice vegetables and proteins into small, uniform pieces so they heat quickly.

If using raw vegetables with high moisture (mushrooms, onions, peppers), pat dry if needed. If using raw bacon or sausage, cook fully and drain before adding.

Sauté aromatics and vegetables

Heat a nonstick or well-seasoned skillet over medium heat. Add 1 tablespoon additional butter or 1 teaspoon oil. Add onions and bell peppers and sauté 2–3 minutes until softened. Add mushrooms and cook another 2 minutes until browned and any liquid evaporates. Add spinach and cook 30–60 seconds until wilted. Transfer cooked vegetables to a plate and set aside.

Warm proteins

If using pre-cooked proteins (ham, bacon, sausage, smoked salmon), warm them briefly in the same skillet for 30–60 seconds to bring to serving temperature. Remove and set aside with the vegetables.

Prepare Egg Mixture

Crack 3 large eggs into a bowl. Add 2 tablespoons milk or cream, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until combined and slightly frothy (about 20–30 seconds). This yields a tender, slightly fluffy omelette.

Cook Omelette

Heat a 8–10 inch nonstick skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Butter should foam but not brown.

Pour the egg mixture into the skillet and let it set undisturbed for about 10–20 seconds until the edges begin to set.

Using a heatproof spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this motion for about 30–45 seconds until the top is mostly set but still slightly glossy—do not overcook.

Evenly distribute your warmed vegetables and proteins over one half of the omelette. Sprinkle your chosen cheese(s) on top of the fillings so they begin to melt from residual heat.

Carefully fold the empty half of the omelette over the filled half using the spatula. Let the folded omelette cook 30–60 seconds more to finish melting the cheese and heat through. For a slightly runny interior, remove from heat sooner; for fully set interior, cook an additional 30 seconds.

Slide the omelette onto a plate, seam-side down, and garnish with minced chives or parsley and a dash of hot sauce or salsa if desired.
