Prepare shaker
If using egg white, start with a dry shake: add bourbon, dry vermouth, fresh lemon juice, simple syrup, orange curaçao, egg white (if using) and bitters into a cocktail shaker with no ice.
Dry shake
Seal the shaker and shake vigorously for 10–15 seconds to emulsify the egg white and aerate the mixture, creating a froth.
Wet shake
Add ice to the shaker (about 6 cubes). Re-seal and shake hard for 12–15 seconds until the shaker is very cold to the touch and the exterior is frosty.
Strain
Double strain the cocktail through a Hawthorne strainer and a fine mesh strainer into a chilled coupe or Nick & Nora glass to remove ice shards and ensure a silky texture.
Garnish & Finish
Express a lemon twist over the surface to release essential oils, then rub the peel around the rim and drop it into the drink. Add a light dusting of freshly grated nutmeg or a thin strip of orange peel if desired for aroma.
