Reheat & Finish

Preheat convection ovens to 350°F (175°C). Place frozen or prepared mini crab cakes and cocktail meatballs on sheet pans lined with parchment. Lightly brush crab cakes and meatballs with olive oil (use about 1–2 tbs per sheet pan) to prevent drying. Reheat crab cakes for 10–12 minutes and meatballs for 8–10 minutes until warmed through and internal temperature reaches 165°F (74°C). If using a stove, finish meatballs in a skillet with 1 tbs olive oil for 4–6 minutes, turning frequently.

Assemble Cold Items

Arrange mini caprese skewers and vegetarian phyllo cups on chilled platters. Place lemon wedges on the platter with crab cakes. Keep items that are served cold refrigerated until service and bring out in small batches to maintain freshness.

Prep & Marinate

Arrange chicken breasts on sheet pans or hotel pans, skin-side up, spaced so air circulates. Roast at 400°F for 22–28 minutes (time depends on thickness) until internal temperature reaches 165°F (74°C) at the thickest part. For even browning, switch pans between racks halfway through cooking and baste once with pan juices or remaining herb oil.

Transfer cooked breasts to hotel pans with a little chicken stock (about 1/4 cup stock per pan) to keep moist. Hold in a steam table at 140–150°F for up to 2 hours.
