Method
Coffee
Boil water
Heat fresh cold water until just off a rolling boil (about 200°F / 93°C). For most brewing methods, this is the ideal temperature.
Add coffee grounds
Place 2 tablespoons of medium-ground coffee into your coffee maker, French press, pour-over cone, or drip basket. Adjust to taste if you prefer stronger or weaker coffee.
Pour water and brew
Pour 8 oz (240 ml) of hot water evenly over the grounds. For pour-over, pour slowly in concentric circles. For French press, pour, stir gently, and steep for 4 minutes before plunging. For drip or automatic makers, follow appliance instructions.
Tea
Heat water
Bring fresh water to the appropriate temperature: near boiling (about 212°F / 100°C) for black and herbal teas, 175–185°F (80–85°C) for green teas. If you don't have a thermometer, bring to a boil and let sit 1–2 minutes for green tea.
Steep tea
Place 1 teaspoon loose leaf tea (or 1 tea bag) into a cup or teapot. Pour 8 oz (240 ml) of the hot water over the tea. Steep for the recommended time: 3–5 minutes for black tea, 2–3 minutes for green tea, 5–7 minutes for herbal. Adjust steep time to taste.
Remove leaves or bag
Remove the tea bag or strain out the leaves to prevent over-extraction and bitterness.
