Mix

In a medium bowl combine ground chicken, panko breadcrumbs, egg, garlic powder, onion powder, Worcestershire sauce, kosher salt, and black pepper. Mix gently with your hands or a fork until just combined; avoid overworking so patties stay tender.

Form

Divide the mixture into two equal portions and shape into patties about 3/4-inch thick and slightly wider than your buns (they will shrink while cooking). Make a slight shallow dimple in the center of each patty to help them cook evenly.

Cook

Heat a large skillet or cast-iron pan over medium heat. Add 1 tablespoon olive oil and swirl to coat. When shimmering, add the patties. Cook undisturbed 4–5 minutes on the first side until browned. Flip and cook 3–4 minutes on the second side. During the last minute of cooking, place a slice of provolone on each patty and cover the pan briefly (30–60 seconds) to melt the cheese. Cook until the internal temperature reaches 165°F (74°C). Transfer patties to a plate and rest 2 minutes.

Guacamole

Prepare

Halve and pit the avocados. Scoop the flesh into a bowl and mash with a fork to your preferred texture (smooth or slightly chunky).

Season

Add lime juice, diced tomato, minced red onion, chopped cilantro, salt, pepper, and minced jalapeño if using. Stir gently to combine and taste; adjust salt or lime as needed. Keep covered and refrigerated until assembly to prevent browning.

Bacon & Buns

Cook Bacon

If bacon is not already cooked, fry or bake until crisp. Drain on paper towels. If pre-cooked, reheat briefly in the skillet to warm and crisp edges.

Toast Buns

Melt 1 tablespoon butter in a clean skillet over medium heat. Place bun halves cut side down and toast 1–2 minutes until golden brown. Alternatively, spread butter and toast under a broiler for 30–60 seconds, watching closely.

Assembly

Spread 1 tablespoon mayonnaise on the bottom half of each toasted bun.

Place a lettuce leaf on each mayo-coated bottom bun, then add a slice of tomato.

Set the hot chicken patty with melted provolone on top of the tomato.

Top each patty with two bacon strips.

Spoon about 2–3 tablespoons of guacamole onto the bacon (adjust to taste).

Finish with the top bun. Press gently and serve immediately.
