Espresso Coffee Base
Preheat and dose
Preheat the espresso machine and portafilter by running a blank shot for 5–10 seconds. Grind 18 g of fresh whole-bean espresso to a fine setting (slightly finer than table salt). Distribute grounds evenly in the portafilter and tamp with medium pressure to create a level puck.
Brew espresso
Lock the portafilter into the machine and pull a double shot aiming for 30–36 ml of espresso in ~25–30 seconds. Target yield is 36 ml extracted from 18 g dose. Adjust grind finer if extraction is too fast, coarser if too slow. Set extracted espresso aside in a warmed cup.
Steamed Milk
Prepare milk
Pour 180 ml of cold whole milk into the metal pitcher. Purge the steam wand briefly to remove condensation.
Steam milk
Insert the steam wand tip just below the surface of the milk and turn on steam to introduce microfoam. Lower the pitcher slightly as foam forms so you get a velvety texture. Once the milk reaches 60–65°C (140–149°F), fully submerge the wand to create a smooth, glossy milk. Aim for about 20 ml of thin milk foam on top.
Polish milk
Tap the pitcher on the counter and swirl to remove large bubbles and integrate foam. This results in silky milk suitable for pouring over espresso.
Assembly & Optional Additions
Sweeten (optional)
If using simple syrup, add 15 ml to the warm espresso and stir gently to combine. Taste and adjust — for less sweetness start with 7–10 ml.
Pour and finish
Pour the steamed milk into the espresso cup starting from about 2–3 cm above the cup, then lower the pitcher and pour more steadily to create a small heart or rosette if desired. Aim for a 1:3 espresso-to-milk ratio overall (approximately 36 ml espresso to 200 ml milk including foam).
Garnish
Lightly dust the top with a mix of 0.25 tsp cocoa powder and 0.25 tsp ground cinnamon, passing through a fine mesh for an even finish.
Cleanup
Purge and wipe the steam wand immediately, knock out the spent puck from the portafilter, rinse the portafilter and pitcher, and wipe down the machine surfaces. Dispose of any leftover coffee grounds and empty drip tray as needed.
