Make the dough
In a medium bowl whisk together 1.25 cups all-purpose flour and 0.25 tsp salt. Add 0.5 cup cold cubed unsalted butter and use a pastry cutter or your fingertips to cut the butter into the flour until mixture resembles coarse crumbs with some pea-sized pieces remaining.
Bring dough together
Sprinkle 2 tablespoons ice water over the flour-butter mixture, tossing gently with a fork until dough just comes together. Add an extra teaspoon of water only if the dough is too dry. Form into a disc, wrap in plastic, and chill in the refrigerator for at least 30 minutes.
Roll and blind-bake
Preheat oven to 375°F (190°C). On a lightly floured surface roll the chilled dough to a rectangle or oval large enough to line a 9 x 5-inch loaf pan or a half-sheet tart pan (this creates the 'half-page' shape). Gently press dough into the pan, trim edges, and prick the bottom with a fork. Line with parchment and fill with pie weights or dried beans. Bake blind for 15 minutes, remove weights and parchment, brush edges with beaten egg for a shiny crust and bake 5–7 minutes more until lightly golden. Reduce oven temperature to 350°F (175°C).
Filling
Sauté vegetables
Heat 1 tablespoon olive oil in a skillet over medium heat. Add 1 finely chopped shallot and sauté 2–3 minutes until translucent. Add 0.75 cup sliced mushrooms and sauté until golden and moisture evaporates, about 4–5 minutes. Add 1 tsp minced garlic and 1 cup chopped spinach; cook just until spinach is wilted, about 1–2 minutes. Season with 0.25 tsp black pepper and 0.25 tsp of the 0.5 tsp salt (reserve remaining salt for custard). Remove from heat and let cool slightly.
Prepare custard
In a mixing bowl whisk together 4 eggs, 1 cup whole milk and 0.5 cup heavy cream until smooth. Stir in 1 cup grated Gruyère and 0.5 cup grated sharp cheddar. Add remaining 0.25 tsp salt and 0.125 tsp freshly grated nutmeg (optional).
Assemble and bake
Scatter the sautéed vegetables evenly across the pre-baked crust. Pour the egg-cheese custard over the filling, allowing it to settle. Gently tap the pan on the counter to remove air bubbles. Bake at 350°F (175°C) for 30–35 minutes, or until the custard is set around the edges and slightly jiggly in the center; an instant-read thermometer inserted in the center should read about 165°F (74°C). If the crust edges brown too quickly, tent loosely with foil for the last 10 minutes.
Rest
Remove quiche from oven and let rest on a rack for 10–15 minutes to finish setting; this makes slicing clean, half-page portions easier.
