Method

Make herb butter
In a large bowl, combine softened butter, minced garlic, chopped rosemary, chopped thyme, lemon zest, 1/2 cup olive oil, 1 tbs kosher salt, and 3/4 tsp black pepper. Mix until fully incorporated. Using your hands or a spoon, gently loosen skin over the breasts and spread about 2–3 tbs of herb butter under the skin of each breast and rub remaining butter all over the exterior of each chicken.
Season and tie
Rub the outside of each bird with remaining olive oil if any and season evenly with remaining kosher salt and black pepper. Truss legs with kitchen twine or simply tuck legs against body to promote even cooking.
Roast
Preheat ovens to 425°F (220°C). Arrange chickens on wire racks set in full-size sheet pans or in hotel pans breast-side up. Roast for 20 minutes at 425°F to develop color, then reduce oven temperature to 375°F (190°C) and continue roasting until internal temperature at thickest part of breast reaches 160°F (71°C) and at thickest thigh reaches 175°F (79°C). For 3–4 lb birds expect 50–70 minutes total roast time; check with thermometer starting at 45 minutes.
Portion for service
For catering, carve each chicken into portions: 2 breasts, 2 thighs, 2 drumsticks, and 2 wings (or pre-slice breasts into 8 slices each). Place portions in hot foil pans lined with parchment, drizzle lightly with pan sauce if using (about 2–3 tbs per portion) to keep moist, and cover with lid or foil for holding.

Preheat and toss
Preheat oven to 400°F (205°C) if not already roasting chickens. In a very large mixing bowl, combine carrots, red potatoes, red onions, and zucchini. Drizzle with 1 cup extra-virgin olive oil, sprinkle with 3 tbs kosher salt, 2 tsp black pepper, and 2 tsp dried oregano. Toss until vegetables are evenly coated.
Arrange and roast
Spread vegetables in an even layer on sheet pans (use multiple pans if needed to avoid overcrowding). Roast in oven for 30–40 minutes, turning once at 20 minutes, until potatoes are tender and edges are caramelized. If roasting alongside chickens, place vegetable pans on separate racks to ensure even air flow.
Finish and hold
When vegetables are done, toss with chopped fresh parsley and adjust seasoning to taste. Transfer to hot foil pans for holding and cover. Keep warm in low oven (about 200°F/95°C) until service, or transport in insulated carriers.
Pan Sauce (Make-Ahead, optional)
Deglaze
After removing roasted chickens from pans, place pans over medium-high heat on the stove (or transfer drippings to a sauté pan). Add white wine (about 2 cups) to deglaze, scraping up browned bits. Reduce by half, about 3–5 minutes.
Add stock and reduce
Add chicken stock and thyme sprigs. Bring to a simmer and reduce until sauce is slightly thickened and flavor is concentrated, about 10–15 minutes. Remove thyme sprigs.
Finish sauce
If you prefer a slightly thicker sauce, whisk a small slurry of 2 tsp flour + 2 tbs cold water and whisk into simmering sauce until glossy, or reduce longer. Off heat, whisk in cold cubed butter, 1 tbs at a time, to emulsify and enrich the sauce. Stir in lemon juice and season with salt and pepper to taste. Strain if desired and transfer to ladles or squeeze bottles for service. Keep warm in a shallow pan over very low heat.

Service notes
Plan about 1 chicken (or 4–6 portions) per 8 guests depending on menu mix. Label pans with contents and serving temperatures. Keep hot foods hot and cold foods cold during transport; follow food-safety guidelines for time and temperature.
