Working in small batches (so batter and oil remain at proper temperature), dip each shrimp into the wet batter, letting excess drip off, then transfer to the dry breading and toss to coat completely. Pour about 2 cups of vegetable oil into a heavy skillet or pot to a depth of about 1 to 1.5 inches (or use a deep fryer). Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of the breading into the oil — it should sizzle and rise immediately without burning.
Fry Shrimp
Fry the shrimp in small batches (6–8 at a time depending on pan size) so they have room and the oil temperature holds. Fry for 1.5–2.5 minutes, turning once, until golden brown and crisp. Small shrimp cook quickly — avoid overcrowding. Use a slotted spoon or spider to transfer shrimp to a wire rack set over a baking sheet or to paper towels to drain. Sprinkle immediately with a light pinch of salt if desired.
Maintain Oil Temperature
Allow the oil to return to ~350°F between batches (2–3 minutes) before adding the next batch to ensure consistent crispness.
Finishing & Serving
When all batches are fried, transfer shrimp to a serving platter.
