Burger Sauce
Make the sauce
In a small bowl combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, smoked paprika, garlic powder and salt. Whisk until smooth. Taste and adjust seasoning. Cover and refrigerate while you prepare the rest (can be made up to 2 days ahead).
Beef Patties
Form patties
Divide 1 lb 80/20 ground beef into two equal portions (about 8 ounces each). Lightly shape into loose round patties about 4.5 inches in diameter and 3/4 inch thick. Make a shallow 1/2-inch dimple in the center of each patty with your thumb to prevent doming during cooking. Do not overwork the meat.
Season
Brush or rub each patty lightly with Worcestershire sauce. Season both sides generously with kosher salt and freshly ground black pepper just before cooking.
Cook patties
Heat a heavy skillet, grill pan or griddle over medium-high heat and add 1 tablespoon vegetable oil, spreading to coat. When oil is shimmering and the surface is very hot, place patties on the pan, leaving space between them. Cook undisturbed for 3 minutes to form a sear. Flip once and cook 2–3 more minutes for medium doneness (internal temperature ~160°F / 71°C for well-done; adjust time for preferred doneness). About 60–90 seconds before they are done, place two slices of sharp cheddar on top of each patty, cover pan briefly (or use a lid) to melt the cheese.
Buns & Finish
Assemble burgers
Spread about 1–2 tablespoons of the prepared burger sauce on the bottom half of each toasted bun. Place a leaf of green leaf lettuce on the sauce, then a cheese-topped beef patty, followed by 2 bacon strips, tomato slices, pickle chips and some sliced onion (warm or raw as you prefer). Spoon a little more sauce on the top bun and place it on the burger.
Serve
Let assembled burgers rest 1 minute, then serve immediately with fries, onion rings or a side salad.
