Method
Burger Patties
Prepare ground beef
Place the 1 lb ground beef in a bowl. Sprinkle 1 tsp kosher salt, 1/2 tsp freshly ground black pepper and 1 tsp Worcestershire sauce over the meat. Mix gently with your hands just until combined — avoid overworking to keep patties tender.
Form patties
Divide the seasoned meat into four equal portions (about 4 oz each). Form each portion into a round patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to prevent doming as they cook.
Heat pan or grill
Heat a large skillet or grill over medium-high heat. Add 1 tablespoon vegetable oil and spread. The cooking surface should be hot; you should see a light shimmer of oil.
Cook patties
Place patties on the hot skillet or grill, leaving space between them. Cook undisturbed for 3–4 minutes to develop a crust. Flip once and cook 2–3 minutes more for medium (internal temperature ~145–150°F / 63–66°C). If adding cheese, place a slice of cheddar on each patty about 1 minute before they finish and cover briefly to melt.
Rest patties
Transfer cooked patties to a plate and let rest for 3–5 minutes. Resting helps juices redistribute and prevents a soggy bun.
Toppings & Assembly
Prepare buns and vegetables
While patties cook, slice the tomato into 4 even slices and thinly slice the red onion. Split the 4 burger buns and spread about 1/2 tablespoon softened butter on each cut side.
Mix sauces
In a small bowl combine 4 tablespoons mayonnaise, 2 teaspoons yellow mustard and 4 teaspoons ketchup. Stir until smooth. Adjust to taste or divide onto buns as desired.
Assemble burgers
On the bottom bun spread about 1 tablespoon of the sauce. Add a lettuce leaf, a cooked patty with melted cheese, one tomato slice, 2 pickle slices and a few rings of red onion. Spread a little sauce on the top bun and place it on the assembled burger.
Serve
Serve immediately with fries or chips if using. Provide hot sauce on the side for those who want extra heat.
Optional (Serving)
If serving fries, cook according to package or recipe instructions and season with salt. Plate alongside burgers and offer condiments.
