Method
Beef Slider Patties
Mix and portion
In a large bowl combine the ground beef, kosher salt, black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands or a spatula until just combined — do not overwork the meat to keep patties tender.
Form patties
Divide the mixture into 12 equal portions (about 2 oz / 55 g each). Lightly press each portion into a round patty about 2.5–3 inches wide and about 1/2 inch thick. Make a very shallow dimple in the center of each patty with your thumb to prevent puffing while cooking.
Chill (optional)
If time allows, place formed patties on a tray, cover, and chill 15–30 minutes to help them hold shape when cooking.
Cooking & Assembly
Heat pan or griddle
Heat a large skillet or griddle over medium-high heat. Lightly oil the surface or spray with cooking spray. The surface should be hot but not smoking.
Cook patties
Place patties on the hot skillet in a single layer, leaving a little space between them. Cook 2.5–3 minutes per side for medium (adjust time for desired doneness). If adding cheese, place half a slice (or a full slice folded) on each patty during the last 30–45 seconds of cooking, then cover the pan briefly to melt.
Prepare buns
While patties cook, split the slider buns. Brush the cut sides lightly with softened butter. Place buns cut-side down on a second skillet or in the oven under the broiler for 45–60 seconds until lightly toasted and golden. If using sesame seeds, sprinkle them on the buttered tops before toasting.
Assemble sliders
Spread sauces as desired on the top and bottom buns (suggested: mayo on bottom, ketchup or mustard on top, spicy mayo for heat). Place a patty on the bottom bun, add pickles, a tomato slice if using, a bit of onion and lettuce, then cap with the top bun. Repeat for remaining sliders.
Serve
Arrange sliders on a platter and serve immediately while hot. Provide extra condiments for guests to customize.

Quick sauce prep
In small bowls combine mayonnaise, ketchup, and mustard for a classic spread. For spicy mayo, mix mayonnaise with sriracha to taste (about 1 part sriracha to 3 parts mayo). Place sauces in bowls or squeeze bottles for easy assembling.

Cook bacon until crisp (pan-fry or bake at 400°F / 200°C for 12–18 minutes), drain on paper towels, and chop to size for sliders.
