Chill glass

Place a martini coupe or chilled martini glass in the freezer or fill with ice water while you prepare the cocktail.

Mix cocktail

In a cocktail shaker, combine 2 oz vodka, 0.5 oz dry vermouth and 0.5 oz activated charcoal syrup. Add 6 pieces of ice and shake vigorously for 12–18 seconds until well chilled (shaker becomes cold).

Strain & garnish

Discard ice/water from the chilled glass. Double-strain the cocktail into the chilled martini glass to remove any small ice shards. Express a lemon twist over the drink to release oils, rim the glass with the twist if desired, and drop the twist in as garnish.

White Ink Collins (White)

Prepare glass

Fill a Collins or highball glass with crushed ice and set aside.

Dry shake (if using egg white)

If you are using the egg white for a creamy head, combine 1.5 oz gin, 1 oz coconut cream, 0.5 oz fresh lime juice, 0.5 oz simple syrup and 0.5 egg white in a shaker without ice. Dry shake vigorously for 15–20 seconds to emulsify and create froth.

Shake with ice

Add ice to the shaker and shake again for 8–12 seconds to chill and slightly dilute the mixture.

Build & top

Strain the cocktail into the prepared Collins glass over the crushed ice. Top with 2 oz club soda, gently stir once to integrate, then garnish with a lime wheel on the rim.

Activated Charcoal Syrup & Misc

Make the charcoal syrup

Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the liquid just reaches a simmer. Remove from heat, whisk in 1 tsp food-grade activated charcoal powder until evenly dispersed. Add 1/2 tsp fresh lemon juice if desired to brighten flavor. Let cool to room temperature, then strain through a fine mesh or coffee filter to remove any lumps. Store in a sealed container in the refrigerator for up to 2 weeks.

Notes on plating & safety

Use food-grade activated charcoal only and be aware charcoal can bind medications and supplements — advise guests accordingly. The syrup makes the martini a deep black; adjust quantity to taste for color and sweetness. Prepare syrups in batches to speed service during happy hour.
