Pork Ribs & Brine
Prepare ribs
Remove ribs from packaging, pat dry with paper towels. Using a small knife, loosen and peel off the silver skin (membrane) from the bone side of the ribs for more tender results. Trim any excess fat.
Make and apply brine
In a large container or bowl, dissolve 1 tablespoon kosher salt and 2 tablespoons brown sugar into 6 cups of water. Add smashed garlic cloves, black peppercorns, and bay leaf. Submerge ribs in the brine, cover, and refrigerate for 1 to 4 hours (1 hour minimum).
Rinse and dry
After brining, remove ribs, discard brine, rinse ribs quickly under cold water to remove excess salt and sugar, then pat thoroughly dry. Let sit at room temperature 20–30 minutes before applying rub.
Dry Rub
Mix rub
Combine smoked paprika, 2 tablespoons brown sugar, 1 teaspoon kosher salt, 1 teaspoon ground black pepper, garlic powder, onion powder, ground cumin, and cayenne pepper in a bowl. Mix until uniform.
Apply rub
Sprinkle and rub the dry seasoning evenly over both sides of the ribs, pressing gently so the rub adheres. Let the rubbed ribs rest 15–20 minutes while you prepare the grill or oven.
Smoking / Slow Cooking & Mop
Preheat grill or oven
For a smoker or charcoal/wood grill: set up for indirect heat and preheat to 225–250°F (107–121°C). Add soaked wood chips or chunks if using (apple or hickory recommended). For oven: preheat to 275°F (135°C) and use a rack on a foil-lined sheet pan.
Start cooking
Place ribs bone-side down on the grill away from direct flame (or on the oven rack). Close the lid or oven door and cook for 2 hours undisturbed at 225–275°F depending on equipment.
Prepare mop
While ribs cook, whisk together 1/2 cup apple cider vinegar, 1/2 cup water, 1/4 cup apple juice and 1 teaspoon hot sauce (if using) in a bowl or jar. This will be used to lightly baste (mop) the ribs to keep them moist and add tang.
Wrapping & Finishing Sauce
Wrap (Texas Crutch)
When ribs are close to tender (about 3 hours), place each rack on a sheet of aluminum foil large enough to wrap. Add 1 tablespoon unsalted butter and 1 tablespoon honey down the length of each rack, then seal tightly to create a steamy pocket. Return to the grill or oven for 30–45 minutes to further tenderize.
Make finishing sauce
While ribs are wrapped, combine 1 cup BBQ sauce with remaining 1 tablespoon butter and 1 tablespoon honey in a small saucepan over low heat. Warm until butter melts and sauce is glossy; keep warm.
Rest & Serve
Rest
Remove ribs from heat and let rest 10 minutes loosely tented with foil. This helps juices redistribute and makes slicing easier.
Slice and garnish
Slice between the bones into individual portions or by 2–3 bone portions. Brush with any remaining sauce. Sprinkle chopped fresh parsley if desired and serve hot.
