Prepare Patties
Form burgers
Place the 1 lb ground beef in a bowl. Sprinkle in 1 tsp kosher salt, 1/2 tsp freshly ground black pepper and 1 tbsp Worcestershire sauce. Gently mix with your hands until just combined—do not overwork. Divide the meat into four equal portions (about 4 oz each). Shape each portion into a patty roughly 3/4 inch thick and slightly wider than the bun. Make a shallow dimple in the center of each patty with your thumb to prevent puffing during cooking.
Chill briefly (optional)
Place formed patties on a plate, cover loosely, and refrigerate for 15–20 minutes if you want firmer patties that hold shape during cooking.
Cook Patties
Flip the patties and immediately reduce heat to medium. Cook another 3–4 minutes for medium doneness (internal temp ~160°F/71°C). If using cheese, place a slice of cheddar on each patty in the final 1 minute of cooking and cover the pan briefly to melt the cheese. If using bacon, reheat or crisp it in the pan alongside patties.
Remove cooked patties to a plate and let rest for 3 minutes.
Prepare Buns & Toppings
While patties cook, halve the buns and spread 1/2 tbsp unsalted butter on each cut side. Toast the buns buttered-side down in a separate skillet or on a griddle over medium heat until golden, about 1–2 minutes. Alternatively, toast under a broiler for 30–60 seconds—watch carefully.
In a small bowl combine 1/2 cup mayonnaise with 2 tsp yellow mustard and 1 tsp hot sauce (optional) to create a simple burger spread. Taste and adjust seasoning.
Assemble Burgers
Spread about 1 tbsp of the mayo-mustard mix on the bottom half of each toasted bun. Place a lettuce piece on top of the spread to act as a moisture barrier, then set the cheese-topped patty onto the lettuce.
Cap with the toasted bun tops and press gently. Serve immediately with fries or a side salad.
