Make the roux
In a large heavy-bottomed pot or Dutch oven set over medium heat, combine 0.75 cups neutral oil and 1 cup all-purpose flour. Stir constantly with a wooden spoon or whisk. The roux will bubble and darken; continue stirring to avoid burning. After about 18–30 minutes the roux should reach a deep chocolate-brown color. Reduce heat slightly if it begins to smoke or stick.
Once the roux is a deep brown, carefully add about 1 cup of the chicken stock while whisking vigorously to loosen and deglaze the pot (it will sputter). Continue adding the remaining stock gradually, whisking until smooth.
Add 2 bay leaves to the pot. Bring the mixture to a gentle simmer, then reduce heat to maintain a low simmer while you complete the rest of the gumbo. Taste and, later, adjust seasoning after proteins are added.

In the same skillet, add the diced onion (1.5 cups), green pepper (1 cup), and celery (1 cup). Sauté for 5–7 minutes until softened and translucent. Add minced garlic (4 cloves) and sauté 30–60 seconds until fragrant. If using diced tomato (1/2 cup), add it now and cook 2 minutes. Transfer the cooked vegetables to the gumbo pot and stir to combine.
Proteins
Bring the gumbo to a gentle simmer. Cover partially and simmer for 25–30 minutes to allow flavors to meld and chicken to cook through.
About 5–7 minutes before serving, stir in the peeled and deveined shrimp (1 lb) and cook until pink and opaque, 3–5 minutes. Check that chicken is fully cooked (internal ~165°F/74°C).
Seasonings & Finishing
During the long simmer (after adding chicken), add the remaining seasonings: 3/4 tsp salt (or adjust to taste), 1/2 tsp black pepper, 1 tbsp Cajun seasoning, 1 tsp dried thyme, 1 tsp smoked paprika, and 1 tsp hot sauce if using. Stir and simmer 10–15 minutes to incorporate flavors. Taste and adjust salt/heat.
When shrimp are cooked, remove the pot from heat. Stir in 2 tbsp chopped fresh parsley and 3 tbsp sliced green onions. If a slightly thicker, herbaceous finish is desired, sprinkle 1 tsp filé powder and stir; do not boil after adding filé. Discard bay leaves.
To serve: divide 4 cups cooked white rice among bowls. Ladle gumbo over rice, garnish with additional green onions and parsley, and offer hot sauce at the table.
