Rinse frog legs under cold water and pat dry with paper towels. Trim any excess skin or connective tissue. Place frog legs in a shallow bowl or resealable bag.

Combine buttermilk, hot sauce, 1 tsp kosher salt, and 1/2 tsp black pepper in a bowl. Pour over frog legs so they are fully submerged. Cover or seal and refrigerate for 30 minutes to 2 hours (30 minutes if short on time, up to 2 hours for more tenderizing).

Breading

While frog legs marinate, combine flour, cornstarch, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, 3/4 tsp kosher salt, and 1/2 tsp black pepper in a shallow dish or wide bowl. Whisk to evenly distribute spices.

Remove the frog legs from the refrigerator. Allow excess buttermilk to drip off, then one at a time dredge the legs in the seasoned flour mixture, pressing so the coating adheres. Place coated legs on a wire rack set over a sheet pan. Let rest 10 minutes to help the breading adhere.

For Frying

Pour oil into a heavy skillet or Dutch oven to a depth of about 1 inch (roughly 1.5–2 cups depending on pan). Heat over medium-high until the oil reaches 350°F (175°C) — if you don't have a thermometer, test by dropping a small pinch of flour into the oil; it should sizzle and brown in about 30 seconds.

Working in batches to avoid crowding, carefully add dredged frog legs to the hot oil. Fry for 3–4 minutes per side (6–8 minutes total) until golden-brown and crisp and an instant-read thermometer inserted into the thickest part reads 145°F (63°C). Turn once halfway through cooking for even browning.

Use a slotted spoon or tongs to transfer fried legs to a wire rack set over a baking sheet to drain and stay crisp. Sprinkle lightly with a pinch of salt while still hot.

In a small skillet over low heat, melt the butter. Stir in lemon juice and minced parsley. Remove from heat.

Brush or drizzle the lemon-butter over the hot fried frog legs, or serve the sauce on the side for dipping. Season with the remaining 1/4 tsp salt and 1/4 tsp black pepper to taste.

Serve immediately with lemon wedges alongside a simple green salad, fries, or crusty bread. Leftovers can be chilled up to 2 days but are best eaten fresh.
