Crab Cakes

Prepare aromatics
Lightly toss the finely diced onion, celery and red bell pepper with a pinch of salt. If you prefer softer aromatics, sweat them in a dry nonstick skillet over medium-low heat for 2–3 minutes until fragrant and slightly translucent; cool before assembly. Cooling prevents breaking up the crab meat.

Gently mix crab cake base
In a large bowl combine the mayonnaise, Dijon mustard, beaten egg, Worcestershire sauce, Old Bay, lemon zest, parsley, salt and pepper. Stir until smooth. Add the cooled aromatics and breadcrumbs and fold until evenly distributed.

Fold in crab
Gently fold the lump blue crab meat into the mixture using a rubber spatula, taking care to keep lumps intact. Do not overmix; you want discernible pieces of crab in the cakes.

Portion and chill
Form the mixture into 6 uniform cakes (about 4–4.5 oz / 110–125 g each). Place them on a parchment-lined tray, cover lightly with plastic wrap, and chill in the refrigerator for at least 30 minutes to firm up. Chilling helps them hold together when cooking.

Pan-sear the cakes
Heat a large skillet over medium heat and add the neutral oil. When the oil shimmers, add the crab cakes (work in batches if needed) and cook without moving for 3–4 minutes until the bottoms are golden brown. Carefully flip and add the butter (if using). Cook another 2–3 minutes until the second side is golden and the cakes are cooked through. Internal temperature should reach 145°F (63°C) or cakes should be hot throughout. Total cook time per cake ~5–7 minutes.

Rest
Transfer cooked crab cakes to a wire rack or paper towel–lined plate to drain briefly and rest for 2 minutes before plating to maintain crisp exterior.
Remoulade Sauce

While the cakes chill, make the remoulade. In a small bowl whisk together the mayonnaise, Creole/Dijon mustard, horseradish, chopped capers, chopped cornichons, hot sauce, paprika, lemon juice, parsley, salt and pepper. Taste and adjust seasoning—add a touch more lemon for brightness, hot sauce for heat, or a pinch more salt. Cover and refrigerate until ready to serve; the flavors meld if it sits 15–30 minutes.
