    Shuck and arrange oysters

    Preheat oven to 450°F (230°C). If oysters are not already shucked, carefully shuck them, keeping the oyster liquor in the cupped half shell. Arrange the 12 half-shell oysters on a baking sheet or ovenproof platter; use rock salt or crumpled foil to stabilize shells so they sit level.

    Keep oysters chilled until just before topping. Preheat oven to ensure it's at temperature when ready to bake.

Creamed spinach topping

    Cook aromatics

    In a medium sauté pan over medium heat, melt 2 tablespoons butter. Add the finely minced onion and cook until translucent, about 3–4 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

    Wilt spinach

    Add the chopped fresh spinach (in batches if necessary) and cook, stirring, until wilted and most moisture has evaporated, about 3–5 minutes. If using frozen spinach, add it already drained and cook 2–3 minutes to heat through and remove excess moisture.

    Make creamy base

    Reduce heat to low. Stir in 1/2 cup heavy cream and 2 tablespoons softened cream cheese until the mixture is smooth. Cook gently 1–2 minutes until slightly thickened.

    Season and finish

    Remove from heat and stir in 1/2 cup grated Parmesan, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/8 teaspoon grated nutmeg (if using), and 1 teaspoon optional hot sauce or Pernod for brightness. Taste and adjust seasoning. Let the creamed spinach cool slightly so it firms a little and is easy to spoon onto oysters.

Crust & assembly

    Prepare panko mixture

    In a small bowl combine 3/4 cup panko breadcrumbs, 2 tablespoons melted butter, 1/4 cup grated Parmesan, and 1 tablespoon finely chopped parsley. Stir until crumbs are evenly coated and slightly moist; this will brown crisply in the oven.

    Top oysters

    Spoon about 1 heaping tablespoon of the creamed spinach mixture onto each oyster (adjust to cover oyster surface without overwhelming). Sprinkle 1 to 1.5 teaspoons of the panko-Parmesan mixture over each topped oyster, pressing lightly so it adheres.

    Bake

    Place the baking sheet in the preheated 450°F (230°C) oven and bake until the crust is golden and the oysters are hot and bubbling, about 8–10 minutes. For a browned top, finish under the broiler for 1–2 minutes—watch carefully to prevent burning.

    Serve

    Remove from oven and let rest 1–2 minutes. Serve the oysters hot with lemon wedges on the side and extra chopped parsley if desired.
