Make the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, mix together graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let cool.

Prepare the Cheesecake Filling

In a large mixing bowl, beat the goat cheese and cream cheese until smooth. Gradually add granulated sugar, mixing until well combined. Add sour cream, eggs, and vanilla extract, mixing until the mixture is smooth and creamy.

Bake the Cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and let the cheesecake cool inside for about 1 hour.

Prepare the Sour Cherry Topping

In a saucepan over medium heat, combine sour cherries, sugar, cornstarch, and lemon juice. Cook, stirring occasionally, until the mixture thickens and starts to bubble. Remove from heat and let cool.

Assemble the Cheesecake

Once the cheesecake has cooled, spread the sour cherry topping evenly over the top. Refrigerate for at least 4 hours or overnight before serving.
