Prepare the Fried Green Tomatoes

Slice the green tomatoes into 1/4 inch thick slices. In one bowl, mix the flour, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, place the cornmeal. Dip each tomato slice first in the flour mixture, then in the egg, and finally in the cornmeal.

Fry the Tomatoes

Heat olive oil in a skillet over medium heat. Fry the breaded tomato slices in batches until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

Make the Crab Cake Mixture

In a bowl, combine crab meat, lemon juice, Dijon mustard, garlic, paprika, cayenne pepper, salt, and black pepper. Mix gently to combine. Form into small patties.

Cook the Crab Cakes

In the same skillet, add a little more olive oil if needed. Cook the crab cakes over medium heat for about 4-5 minutes on each side until golden and heated through.

Assemble the Benny

On a plate, layer mixed greens, a fried green tomato slice, a crab cake, and top with crumbled goat cheese. Drizzle with Benedict sauce if desired.
