Marinate the Pork

In a large bowl, combine minced garlic, orange juice, lime juice, oregano, cumin, salt, and black pepper. Add the pork shoulder, ensuring it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Sear the Pork

Heat olive oil in a large Dutch oven over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Sear the pork on all sides until browned, about 5-7 minutes per side.

Braised Cooking

Add the remaining marinade to the pot, cover, and reduce heat to low. Braise the pork for 3-4 hours, or until it is fork-tender.

Shred the Pork

Remove the pork from the pot and let it rest for 10 minutes. Shred the meat using two forks.

Assembly

To assemble the sandwiches, layer the shredded pork on Cuban bread. Optionally, add pickles and mustard. Close the sandwich and press it down slightly.

Grill the Sandwich

Heat a panini press or skillet over medium heat. Grill the sandwich until the bread is crispy and golden, about 3-4 minutes on each side.
