Prepare corn
If using fresh corn: cut kernels from 2 ears (about 2 cups). If using frozen, thaw and drain excess moisture. Pat kernels dry with paper towel.
Combine filling
Remove skillet from heat and let cool slightly (2 minutes). In a bowl, combine the cooked corn, crumbled drained tofu, sliced green onions, chopped basil leaves (stack and chiffonade for even ribbons), soy sauce, sesame oil, rice vinegar, cornstarch, salt, and pepper. Mix thoroughly so cornstarch evenly coats mixture and binds juices. Taste and adjust seasoning — add up to 1 tsp soy sauce or pinch more salt if desired. Let mixture rest 5 minutes to allow cornstarch to hydrate.
Wrappers & Assembly
Set up an assembly area with a dusted work surface, a small bowl of water for sealing, and the wrapper stack covered with a clean towel to prevent drying.
Portion filling
Spoon about 1 teaspoon (roughly 7–9 grams) of filling into the center of each wrapper. Do not overfill — leave a 1/2-inch border around the edge.
Seal potstickers
Dip your fingertip into the water and moisten half the wrapper edge. Fold wrapper in half over the filling to form a semicircle and press center to seal. Starting at one end, make 3 small pleats along the moistened edge, pressing each pleat firmly to the opposite edge (traditional pleats) until sealed. Repeat until all wrappers are filled. If wrappers dry, cover with a damp towel.
Cooking
Pan-fry and steam
Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons neutral oil and swirl to coat. Arrange potstickers flat-side down in a single layer with a small gap between them (cook in batches if needed). Cook 2–3 minutes without moving until bottoms are golden brown.
Carefully add 1/2 cup water to the skillet (it will sizzle). Immediately cover with a tight-fitting lid to trap steam. Reduce heat to medium-low and steam 5–6 minutes, or until wrappers become tender and translucent and filling is heated through.
Remove lid and continue cooking uncovered 1–2 minutes to evaporate remaining water and crisp the bottoms again. Use a spatula to transfer potstickers to a serving plate.
Repeat with remaining potstickers, adding a little more oil between batches if needed.
Dipping Sauce (optional)
Whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1/2 teaspoon sesame oil, 1/2 teaspoon honey (or sugar), and 1/4 teaspoon red pepper flakes in a small bowl. Adjust sweetness or vinegar to taste. Serve alongside potstickers.
