Prepare the Fries

Peel the potatoes and cut them into thin strips. Rinse with cold water to remove excess starch, then soak in cold water for at least 30 minutes.

Heat the Oil for Frying

In a large, heavy pot, heat the vegetable oil over medium-high heat to 350°F (175°C).

Fry the Potatoes

Drain the potatoes and pat them dry with paper towels. Fry in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels, then season with salt.

Prepare the Steak

Preheat your grill or skillet over medium-high heat. Rub the ribeye steaks with olive oil, salt, and black pepper on both sides.

Grill the Steak

Cook the steaks for about 4-5 minutes per side for medium-rare, depending on thickness. Use a meat thermometer to check for desired doneness (130°F for medium-rare).

Rest the Steak

Remove the steaks from the grill and let them rest for 5 minutes before slicing.

Serve

Plate the steak and serve alongside the crispy fries. Garnish with chopped fresh parsley.
