Preparation Directions
Prepare the Gelatin
In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water and let it sit for about 5 minutes until it blooms.
Heat the Cream
In a saucepan, combine the heavy cream, sugar, lime juice, and lime zest. Heat over medium heat until it just begins to simmer, stirring occasionally.
Combine Gelatin and Cream
Remove the saucepan from heat. Add the bloomed gelatin to the cream mixture and stir until the gelatin is completely dissolved.
Add Basil
Tear the fresh basil leaves and add them to the mixture, stirring gently to combine.
Pour and Chill
Pour the mixture into serving glasses or molds. Refrigerate for at least 4 hours or until set.
Serve
Once set, serve chilled, optionally garnished with additional basil leaves or lime slices.
