Prepare Rim & Glass

Choose a rocks or coupe glass and chill it in the freezer for 5–10 minutes or fill with ice water while you prepare the cocktail.

On a small plate combine the kosher salt and fine sugar (if using) and spread into an even layer.

Run the lime wedge around the rim of the chilled glass to moisten. Dip the rim into the salt mixture, twisting to coat evenly. Set the glass aside.

Make Wasabi Emulsion

Dissolve wasabi

In a small bowl or measuring cup, combine 0.25 tsp wasabi paste with 0.25 oz (about 7 ml) of the fresh lime juice and stir vigorously until smooth. This helps disperse the wasabi so it mixes evenly in the cocktail and reduces clumping.

If the wasabi is very strong, taste a tiny amount on the back of your hand and adjust by adding up to another 0.125 tsp (a pinch) of wasabi or a splash more simple syrup to mellow the heat.

Mix Cocktail

Add the Patrón Silver (2 oz), triple sec (1 oz), passion fruit purée (1 oz), the remaining lime juice (approximately 0.5 oz after using a portion to dissolve wasabi), the wasabi emulsion, and 0.25 oz simple syrup (if using) into a cocktail shaker.

Fill the shaker with ice (approximately 6 oz worth or enough to 3/4 fill the shaker).

Shake vigorously for 12–15 seconds until the shaker is cold to the touch and the contents are well chilled and slightly frothy from the passion fruit.

Taste once by pouring a small amount into a tasting glass. If the wasabi heat is too pronounced, add 0.25 oz simple syrup and re-shake briefly.

Finish & Serve

Discard the ice or water from the chilled serving glass. Double-strain the cocktail into the prepared glass over fresh ice (for a rocks presentation) or without ice for a coupe presentation to remove any pulp or wasabi solids.

Garnish with a lime wedge on the rim and, if desired, a thin slice of jalapeño or a small dab of wasabi placed on the lime wedge or on the glass edge for an aromatic hint.

Serve immediately. Advise guests that the drink carries a gentle sinus warmth from the wasabi — start with a small sip to gauge heat.
