Prepare dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk the milk, large egg, melted cooled butter, and vanilla extract until smooth and homogeneous.

Mix batter

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula or wooden spoon until just combined; small lumps are fine. Do not overmix (overmixing makes pancakes tough). If the batter seems very thick, add 1–2 tablespoons of milk to reach a pourable but slightly thick consistency.

Prepare strawberries

Hull and slice 1 cup of strawberries into roughly 1/4-inch slices. Reserve 1/2 cup extra sliced strawberries for serving. If strawberries are very juicy, lightly pat with paper towel.

Preheat griddle

Heat a nonstick griddle or large skillet over medium heat (about 350°F / 175°C if using a thermometer). Brush or wipe the surface with the butter or oil so it is lightly greased.

Cook pancakes with strawberries

For each pancake, pour about 1/4 cup of batter onto the hot griddle. Immediately scatter 6–8 slices of the prepared strawberries onto the batter on the griddle, gently pressing them into the batter so they adhere. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.

Flip and finish

Carefully flip each pancake with a spatula and cook the second side until golden brown and cooked through, about 1–2 minutes more. Transfer cooked pancakes to a warm plate and cover loosely with foil while you cook remaining pancakes. Re-grease the griddle as needed.

Serve

Stack pancakes 2–3 high on plates, top with the reserved sliced strawberries, drizzle with warm maple syrup, and dust with powdered sugar if desired. Serve immediately.

Leftovers can be cooled, refrigerated in an airtight container for up to 2 days, or frozen between parchment sheets for up to 1 month. Reheat gently in a toaster oven or skillet.
