Cocktail Preparation
Dry shake (if using egg white)
Add shochu, gin, yuzu juice, elderflower liqueur, simple syrup, ume plum wine, egg white (if using), and orange blossom water to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build a silky foam.
Wet shake
Open the shaker, add ice (about 1 cup or enough to fill shaker 2/3), re-seal and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and the drink is well-chilled and slightly diluted.
Serve
Present immediately while the foam is fresh and the aromas of yuzu, elderflower and orange blossom are active.
