On a clean work surface, combine all-purpose and semolina flours into a mound. Create a large well in the center.

Crack the eggs into the well, add olive oil and salt. Using a fork, gently whisk the eggs while gradually incorporating flour from the inner walls of the well until a shaggy dough forms.

When the dough becomes too stiff to mix with a fork, use your hands to knead, incorporating remaining flour. If dough is too dry, add cold water 1 tablespoon at a time; if too sticky, sprinkle a bit more flour.

Knead vigorously for 8–10 minutes until dough is smooth and elastic. Form into a ball, coat lightly with olive oil, wrap in plastic, and rest at room temperature for 30 minutes.

After resting, divide dough into 4 pieces. Flatten one piece and run through a pasta machine, progressively reducing thickness to desired setting for tagliatelle or pappardelle (usually 4–6 passes). Dust with semolina to prevent sticking.

Shape into ribbons (about 8–12 mm wide for tagliatelle). Arrange on trays lightly dusted with semolina, cover to prevent drying, and allow to rest 10–15 minutes before cooking.

Fra Diavolo Lobster Sauce

If using live lobster: bring a large pot of heavily salted water to a boil. Plunge lobster in for 2–3 minutes until bright red and just cooked through. Transfer to an ice bath briefly to stop cooking. If using lobster tails: simmer or roast until just cooked (internal temp ~140°F / 60°C). Reserve lobster shells for stock.

Remove meat from shells: split lobster tails and knuckles, extract meat in large pieces. Roughly chop larger pieces into 1–1.5 inch chunks. Reserve lobster meat and set aside, keeping some whole claw pieces for presentation if desired.

Make a quick shell stock: in a medium saucepan, heat 1 tablespoon olive oil over medium-high. Add lobster shells and saute 2–3 minutes to deepen color. Add 1/2 cup white wine and reduce by half. Add 1 cup water, simmer 10 minutes, then strain and reserve 3/4 cup stock for the sauce.

In a large sauté pan or shallow pot, heat 3 tablespoons olive oil and 2 tablespoons butter over medium heat. Add minced shallots and cook 2–3 minutes until translucent. Add sliced garlic and crushed red pepper, cook 30–45 seconds until fragrant but not browned.

Pour in remaining white wine (1/2 cup if you used 1/2 cup for shells, or the full 1 cup total) and bring to a boil, scraping up any browned bits. Reduce by half—about 2–3 minutes.

Add the crushed tomatoes and tomato paste, stir to combine. Add reserved shell stock. Bring sauce to a gentle simmer, season with 1 teaspoon salt, 1/2 teaspoon black pepper, and sugar if tomatoes taste too acidic. Simmer uncovered 12–15 minutes to concentrate flavors and allow sauce to thicken slightly.

Stir in torn basil and chopped parsley, then add lemon zest and a squeeze of lemon juice to brighten. Adjust seasoning to taste.

Add reserved lobster meat to the sauce and gently simmer 2–3 minutes just to heat through and marry flavors. Be careful not to overcook lobster or it will become tough. If sauce seems too thick, add up to 1/2 cup reserved pasta water or additional shell stock to reach desired consistency.

To Finish & Serve

Bring a large pot of salted water to a rolling boil. Add fresh pasta and cook until al dente—fresh tagliatelle typically 2–3 minutes (test frequently). Reserve 1 cup pasta cooking water before draining.

Using tongs, transfer pasta directly from pot into the fra diavolo lobster sauce. If sauce needs loosening, add reserved pasta water, 2–3 tablespoons at a time, tossing gently to coat. Add 1 tablespoon butter and 1 tablespoon olive oil; toss to emulsify and give a glossy finish.

Gently fold in larger lobster pieces so they are evenly distributed but still visible. Reheat for 30–60 seconds—do not boil.

Plate pasta and top with a claw or decorative piece of lobster if reserved. Garnish with chopped parsley and an extra drizzle of olive oil. Serve with a lemon wedge on the side for guests to finish if desired.
