Prepare glass
Select a large wine glass or stemmed goblet and chill briefly by filling with ice and cold water for 1–2 minutes, then discard the chilling ice and water. Alternatively, place the glass in the freezer for a few minutes.
Muddle mint
Place the fresh mint leaves into the chilled glass. Add the simple syrup if using (optional) and gently press the mint leaves 3–4 times with a muddler or the back of a spoon to release aromatic oils — avoid over-macerating so the mint does not turn bitter.
Add lime and St. Germain
Pour in the fresh lime juice and the St. Germain elderflower liqueur over the muddled mint.
Add ice
Fill the glass with fresh ice cubes or crushed ice to about three-quarters full, leaving room for sparkling liquids.
Add prosecco and soda
Slowly pour the chilled prosecco into the glass, then top with the chilled soda water. Pour gently to preserve bubbles and to avoid overflow.
Stir and finish
Use a long spoon to gently stir the cocktail once or twice to combine the liqueur, lime and soda with the prosecco without knocking out too much carbonation.
Garnish and serve
Garnish with a lime wheel or wedge on the rim and a small sprig of fresh mint tucked into the drink. Serve immediately while cold and effervescent.
