Our version of a spritz (without spritz). This cocktail is qualitatively cocooning, embracing the freshness of Rose from Provence, elevated by citrus notes.

Build
Chill a large white wine glass or a stemmed goblet by filling it with ice and setting aside for 30 seconds. Dump the ice from the glass and add fresh large ice cubes to fill the glass halfway.
Combine
In a mixing glass or Boston shaker without shaking, pour 3 oz Provence rosé, 0.5 oz aperitif wine or bitter aperitivo, 0.5 oz St. Germain (elderflower liqueur), 0.5 oz fresh lemon juice, and 0.25 oz simple syrup. Stir gently for 10 seconds to combine and slightly chill the liquid.
Finish
Strain the mixture over the prepared glass with fresh ice. Top with 1 oz chilled sparkling water, pouring gently down the side of the glass to preserve effervescence. Give one very light stir (2–3 rotations) to integrate the sparkling water.
Garnish & serve
Express an orange peel over the glass by pinching it (skin side down) to spray oils across the surface, then rub the rim with the peel and drop it in as garnish. Optionally float a single edible rose petal in the drink for an aromatic, cocooning presentation. Serve with a short straw or cocktail pick.
Notes: Taste before serving and adjust sweetness with small additional measures (±0.125 oz simple syrup) if needed. The drink is meant to feel light, floral, and slightly citrus-forward — do not overpower with more sparkling water than specified, which will dilute the rosé character.
