Method
Prep
Chill the Prosecco and soda water in the refrigerator until cold. Rinse and hull the strawberries; slice two thin for muddling and slice the remaining for garnish. Prepare a lemon wheel and a mint sprig.
Build the Spritz
Muddle
Place the 2 sliced strawberries into a mixing glass or the serving glass. Add the Dola Dira (strawberry liqueur/cordial). Gently muddle just a few times to release juices and aromatics — do not pulverize; you want a few chunky pieces.
Add ice
Fill the serving glass with ice cubes until about 3/4 full to keep the drink cold and prevent over-dilution.
Combine
Pour the chilled Prosecco over the muddled strawberries and Dola Dira. Stir gently once or twice with a bar spoon to combine, preserving bubbles.
Top
Top with the chilled soda water to lighten the spritz and give effervescence. Stir very gently to integrate without flattening the bubbles.
Finish & Garnish
Thread the reserved strawberry slices onto the rim or float them on top. Add the lemon wheel on the rim and lightly clap the mint between your hands to release oils, then tuck the sprig into the drink as a garnish.
Taste and adjust: if you prefer sweeter, add another 1 teaspoon (approx. 5 ml) of Dola Dira or a light drizzle of simple syrup; if too sweet, add an extra splash of soda water.
Serve immediately while cold and bubbly.
