Method
Amante Spritz (per cocktail)
Prepare glass
Fill a large wine glass or highball with ice (about 1 cup). Chilling the glass briefly in the freezer for 5–10 minutes ahead of time is optional.
Mix base
In a cocktail shaker or stirring glass filled with a few ice cubes, combine 2 oz Amante aperitivo, 1 oz passion fruit purée or juice, 0.5 oz fresh lime juice and 0.25 oz simple syrup.
Shake or stir
If using passion fruit purée (thicker), shake vigorously for 8–10 seconds to integrate and chill. If using strained juice, you can gently stir for 10–12 seconds.
Strain into glass
Double-strain (if shaken) or fine-strain (if stirred) the mixture into the prepared glass over fresh ice to remove large pulp or seeds, leaving about 1–1.5 inches of headroom.
Garnish and finish
Float 1/2 tsp passion fruit seeds on top (if using) and perch a lime wheel or wedge on the rim. Optionally slap a mint sprig between your palms to release aroma and place as garnish. Serve immediately with a straw or stirrer.

Prepare batch base
In a pitcher or mixing vessel, combine 12 oz Amante aperitivo, 6 oz passion fruit purée or juice, 3 oz fresh lime juice and 1.5 oz simple syrup. Stir vigorously until fully integrated. If using a thicker purée, whisk or use an immersion blender briefly to homogenize.
Chill
Cover and chill the base mixture for at least 15 minutes or keep it on ice until ready to serve.
Garnish and present
Add a small spoonful of passion fruit seeds to each glass if desired, add a lime wheel or wedge and optionally a mint sprig. Serve immediately.
