If desired, place a rocks glass in the freezer for 5–10 minutes beforehand to lightly chill. Otherwise proceed with a room-temperature glass.

Place one large ice cube or sphere in the chilled rocks glass. Large ice melts slower and is recommended to preserve the sherry's concentrated sweetness.

Pour 3 tablespoons (about 45 ml) of Alvear Pedro Ximénez 'Solera 1927' directly over the ice.

Twist an orange peel over the glass to express the oils, then rub the peel around the rim and drop it into the drink as a garnish. The citrus oils add a bright aromatic contrast to the PX's raisin and molasses notes.

Serve immediately. Sip slowly — Pedro Ximénez is intensely sweet and viscous; a small measure is meant to be enjoyed in sips or paired with a bite of cheese or dried fruit.

Arrange 1 oz of aged Manchego or a small wedge of blue cheese, 1/4 cup toasted almonds and 2 halved dried figs or dates on a small plate.

Offer the plate alongside the glass of PX. Take a small bite of cheese or fruit between sips to balance the wine's sweetness and highlight tertiary flavors.
