Prickly Pear Purée
Prepare and peel prickly pears
Wear gloves or handle carefully. Rinse prickly pears to remove loose glochids. Using a sharp knife, cut off both ends of each fruit, slice lengthwise, and peel the skin away from the flesh. Place the peeled flesh in a medium bowl.
Cook with sugar to extract color and flavor
Combine the peeled prickly pear flesh, 1 cup sugar, and 1 cup water in a small saucepan. Bring to a gentle simmer over medium-low heat, stirring occasionally to dissolve sugar. Simmer 5–8 minutes until the flesh softens and releases juice and color. Remove from heat and let cool slightly.
Purée and strain
Carefully transfer the mixture to a blender and blend until smooth (pulse 20–30 seconds). Pour the purée through a fine-mesh sieve set over a bowl, pressing with a spoon or spatula to extract as much liquid as possible. Discard the solids. Stir in 2 tablespoons fresh lemon juice to brighten flavor and help preserve color. This yields approximately 1 cup prickly pear simple syrup/purée. Taste and add up to 2 tablespoons additional sugar if too tart.
Cool
Let the pricked pear purée cool to room temperature; refrigerate if making ahead.
Lemonade Base & Assembly
Juice lemons
Juice fresh lemons until you have 1 cup (about 4–5 lemons). Strain seeds and pulp if desired for a clear lemonade.
Combine base liquids
In a 2-quart pitcher, combine 1 cup fresh lemon juice, 4 cups cold water, and the prickly pear purée/simple syrup (about 1 cup). Stir thoroughly to combine. Taste and adjust sweetness or balance: if too tart, add up to 1/4 cup additional simple syrup or sugar dissolved in 2 tablespoons hot water; if too sweet, add up to 1/2 cup more water or a squeeze of lemon.
Chill
Add 4 cups of ice to the pitcher or divide ice among serving glasses. Refrigerate for 15–20 minutes if you want it well-chilled before serving.
Storage
Keep leftover lemonade refrigerated up to 3 days. Stir before serving; the color may settle. If stored longer, taste and adjust with fresh lemon or simple syrup as needed.
